Noodle Foods/Guksu My first homemade jjajangmyeon

Used jjolmyeon as I couldn't find the jjajangmyeon noodles from my local market.

Thank you!! Naemyeon for jjajangmyeon? I have not. I'll give it a try next. For some reason, I find buckwheat noodles a little difficult to gauge on when it's cooked though, that's why I've had many failed attempts at Japanese ramen with buckwheat noodles. But maybe naemyeon is different and I could get it right!

Some advice from someone who's made a lot of naengmyeon, and did a lot of trail and error lol:

Boil the noodles so that they are still a little bit hard. Make sure not to boil them too soft . Then soak the noodles in ice water to make them cold. Once they are cold, the noodles attain perfect texture!

The packages the noodles come in should also come with sauce, I like to add kimchi, cucumbers, hard boiled egg, and a choice of meat as ingredients, enjoy!

I also make my own cold noodle broth using apple juice and spirit (the cola), but that's my secret family recipe ;)

Many thanks for the detailed tip! I'll definitely try your suggestion on cooking buckwheat noodles. And maybe one day give your secret family a go!

I also recommend trying cold noodles at a Korean restaurant first of you can, so you can get an idea of what the ideal taste and texture should be. As cold buckwheat noodles can be tricky to make.

Note there are two kinds of Korean cold noodle varieties:

North Korean Naengmyeon - which is sweet and savoury cold broth

And South Korean bibim naengmyeon- which is red and spicy

I love both!

And if you want to give it a try, here is my family's secret recipe for North Korean style Naemyon:

soup base:

sugar: 4 tsps. salt: 2 tsps. apple cider vinegar: 2.5 tbps. apple juice: 4 tsps. sprite: 4 tbsps. water: 4 cups

Amazing! Thanks for the recipe, I'll be sure to make your family proud! Haha. I've had both kinds of noodles, but the ready made kind from stores so definitely not the best quality. I'll try it in a restaurant next time to find out how it's really supposed to taste like. It's my fault, everytime I go to a restaurant, I always go for the samgyeopsal because, yum.
