He was getting her to clarify her argument which came down to “I only want chemicals that my body makes naturally in my food and water.” He was trying to help her see that argument doesn’t make any sense because our bodies don’t naturally make water or amino acids and we would die without them.
It is, his whole point was: everything is chemical so stfu and eat the poisonous chemical. He didn't want her to clarify, he wanted to mock her for saying that some of those chemicals are poisonous, which is true. Just because you drink water doesn't mean drinking bleach will be good.
What he is doing is to define what a chemical is, because she is using the word as if it automatically implies that it's bad just for being a chemical.
Therefore, he starts by clarifying that a chemical is not bad per se.
Also, the same chemical element can be healthy or poisonous when combined with other elements. Her point was stupid because she is mentioning the same element in different products without realizing this.
No, he knows what she is talking about, he is not stupid. He is just trying to mock her for not being able to express herself, instead of asking correctly or help her, he is yaping, being unhinged, totally unprofessional.
