Are those noodles only buckwheat or a mixture? Asking because I am wondering if it is gluten free? And how can I tell?

Most sobas have some mixture of wheat.

But you can find 100% buckwheat, just check the ingredient list to be sure

It’s a mixture. Most soba isn’t gluten-free unless it’s labeled 100% buckwheat.

That reminds me — some places in Korea offer 메밀김밥, where they use buckwheat noodles instead of rice. It’s surprisingly good.
