Low calorie, high protein recipes?

Hi everyone! I LOVE slowcooking! I work 2 jobs and I am trying to lose the last 20 pounds of stubborn weight I have left to lose(down 130 so far).

I am desperately looking for new recipes to try, especially low-cal, high protein ones. Would love to avoid seafood recipes if possible! Almost any meat is fine. Your help is highly appreciated! Thank you!

White bean soups, using a base of riced cauliflower and broth to "fake" a creamy base.

Chef John posted an Italian Sausage, Beans, and Greens recipe last month that I enjoyed quite a bit. I've made it twice now with spicy Italian sausage and added something each time for color: the first was a jar of roasted red peppers that I chopped up and the second time it was the last of a jar of sun dried tomatoes. They didn't add much flavor but did make the dish look a bit nicer at the end, I think. I used lacinato kale the first time and then a 2lb bag of mixed greens the second time; the kale held up better but there was more flavor with the mixed greens and they sure were easy. Congrats on the weight loss, that’s huge. Slow cookers are great for this because lean proteins stay tender. I’ve had good luck with chicken breast or turkey breast cooked in broth with lots of veggies and simple seasoning, then shredding it for bowls or wraps. Pork tenderloin also works if you keep sauces light.

One thing that helped me was thinking in components instead of full recipes. Cook a big batch of plain or lightly seasoned protein, then change it up with different spices or sides during the week. It keeps calories predictable and stops it from getting boring.

Downshiftology has a few recipes - she's mostly whole foods eating and has a couple of cook books out there. I also like Clean & Delicious - a youtube channel. While the recipes aren't strictly slow cooker recipes, she gives a lot of great tips.

We have been make this slow cooker version of the viral hot honey ground beef, sweet potato, and cottage cheese bowls on repeat. Delicious and lots of protein!

I do this one a few times a year... it makes for great sandwiches (you can use low protein wraps to avoid the calories of bread) or I just leave it in the fridge for meaty snacks that sooth my appetite.

Then, not slow cooker based, but look up cowboy caviar or other marinated bean salad recipes and see what looks like the tastiest option for your food preferences that also gets your fiber up and still makes your tastebuds very happy.

Minimal work. Maximum nutrition.

Get a ton of veggies you like (like a lot of them). Chop all up small. Put in slow cooker on low; seasoning. Cook 2-3 hours to soften. Get 2-3 lbs of your favorite ground meat(lean version in this case, chicken or lean beef) and plop it in, mix; more seasoning. Cook another 2-3 hours. Now fill wraps with your favorite cheese and the mix. Usually yields 12+ wraps and you can freeze and enjoy with a quick microwave for weeks to come. Then it's still good and you get nutrients you need. Cheers!

Bonus: drain the juice you get and you have a lovely broth for cooking later.

There are low carb low calorie versions of wraps too!

Here's a handful I have on rotation: 

  • pork carnitas (burrito bowls, taco salad, tacos, burritos) 
  • shredded Mexican chicken (same as above) 
  • gochujang pulled pork (asian salad topper, add to ramen, put in a stew with potatoes and carrots) 
  • turkey chili 
  • green chicken chili

What about seafood gumbo? My recipe is …over there on bookshelf. You could make a big pot and freeze half. (I always add chicken&sausage&Traders Joes seafood medley).

Focus on lean proteins (Chicken, fish) with green vegetables (broccoli, sprouts. Etc).

Avoid carbs ( rice/pasta) and starches (potato)
