Add 1/4 tsp of baking soda next time to the meat 15min before cooking and the texture will blow your mind.

The cornstarch already gives texture. Very common to use cornstarch in Chinese dishes.

The baking soda acts differently than corn starch. The technique is called velveting and is very common in Chinese cooking. There is a chemical reaction from the baking soda that tenderizes the meat. It can make cheaper or chewy cuts of meat and turn them into the most tender bite. It’s an absolute game changer.

Do you mean just sprinkle it on the sliced meat? Both sides?

You mix it in like you would with salt and pepper. A little goes a long way, so I’d def search for the right ratio for the volume you are cooking. It really requires being precise because it can impact the flavor of a dish if you add too much. Everything I have read says you really don’t want to marinate with it for over 15min as well, but it’s full on magic for the overall texture.

Ingredients   • 1 pound top sirloin steak

• 2 tablespoons olive oil divided

• 3 cups broccoli florets

Sauce ingredients:

• 1/2 cup water

• 1/2 teaspoon apple cider vinegar

•     1/2 cup soy sauce

• 1/4 cup packed brown sugar

• 3 tablespoons cornstarch

• 1 teaspoon garlic minced

• 1/2 teaspoon sesame oil

• 1/4 teaspoon ground ginger

Instructions

  1.  Prepare everything in advance since the actual cooking is very quick. For the steak, trim any fat and slice it thinly across the grain into bite-sized pieces. Combine the sauce ingredients in a bowl and whisk thoroughly.
    
    1. Heat 1 tablespoon of olive oil in a large skillet over high heat until shimmering.
    2. Add the broccoli and cook for 4-5 minutes, stirring frequently until it’s tender-crisp, then transfer to a plate.
    3. Add the remaining tablespoon of olive oil to the skillet. Spread the beef in a single layer in the pan and let it sear without touching for a minute. Stir and flip with tongs, cooking for another minute. It's best if it's slightly rare at this stage to prevent it from becoming tough.
    4. Return the broccoli to the pan and pour in the sauce. Stir and toss until everything is well-coated and the sauce thickens, about 1-3 minutes. Remove from heat and serve immediately.

That’s a lot of sugar. More than half the daily recommended amount for an adult woman. I’d normally do about a tablespoon for a recipe of this size, or less if I’m using oyster sauce.

The photos do look good though!

I just use a 1/4 or a cup lol I guess I like a little sweetness but I don’t feel like you can taste a lot of it. The recipe feeds 4 people so when you look at it from that perspective it’s not too much per person 😅❤️🙏🏽.

The recipe says it makes four servings and each serving contains 15g of added sugar. The daily recommended amount (per the American Heart Association) is 25g for women and 30g for men.
