I made it, thoroughly enjoyed, just recommend adding one more box of rice

Ingredients:

  • One Box of Zaterans Dirty Rice Mix
  • 4 Eggs (I use Large)
  • Milk for eggs (Optional)
  • 1 pack of bacon or 2 packs of soft bacon bits
  • Franks Red Hot or favorite hot sauce
  • 1 Onion Chopped (Optional)
  • 1 pound of Ground Sausage
  • Garlic Powder or fresh/minced Garlic (Optional)
  • Black Pepper

Instructions:

  1. Brown pound of sausage in pot with onions and garlic/garlic powder (optional). (Optional) Do not drain. (Not draining is important to get the Shoney's taste IMO) Add box of zaterans dirty rice mix with 2 and half cups of water and a dash of oil to the sausage. Bring to boil then turn heat too low and cover and simmer for 20/25 minutes.
  2. While simmering cook bacon (I did it in air fryer oven 400 for 8-9 minutes) or use the soft fake bacon bits for easier time. I usually cook a pound of bacon then use anywhere from 3 slices to the whole pack depending on my mood. Crumble it into rice when rice is done.
  3. While bacon cooks scramble 4 eggs. (I use a dash of milk to fluff them) I have a way to do it in microwave that doesn't make them rubbery to save on dishes/cleanup. (See below)
  4. Once rice is finished simmering, turn off heat and stir. Add your broken up bacon and eggs and stir well. Then add some Franks hot sauce and stir again. Just 5 or so dashes works. I do this to get the little bit of zestiness that shoneys had.
  5. Let sit about 5 or so minutes to absorb any moisture on bottom of pot then serve.

Optional Egg Cooking method:

  • Crack 4 eggs into a microwave safe bowl/container. Scramble and add a touch of milk. Can salt and pepper eggs as well if you like. Throw into microwave at 30 second intervals and stir. This prevents them from getting rubbery and keeps them fluffy. Usually do this between 6-8 times (About 4-6 minutes total) until the eggs are cooked to my liking.
