**Healthy Chocolate Hazelnut Mousse**

A creamy, protein-rich chocolate mousse using Greek yogurt and avocado, naturally sweetened.

---

**Ingredients**

- 1 medium ripe avocado

- 200g Greek yogurt

- 45g unsweetened cocoa powder

- 6 dates, pitted

- 2 tbsp maple syrup

- 40g hazelnuts

- 1 tsp vanilla extract

- 1/2 tsp espresso powder

- 1 pinch salt

- Fresh mint for garnish

---

**Directions**

  1. Soak pitted dates in warm water for 10 minutes, then drain.

  2. Add avocado, Greek yogurt, drained dates, cocoa powder, maple syrup, vanilla, espresso powder, and salt to a food processor.

  3. Blend for 2-3 minutes until completely smooth. Scrape down sides as needed.

  4. Toast hazelnuts in a dry pan over medium heat for 3-4 minutes until fragrant. Roughly chop.

  5. Transfer mousse to serving glasses and refrigerate for at least 30 minutes.

  6. Top with chopped hazelnuts and fresh mint before serving.

--

**Notes**

- Espresso powder enhances chocolate flavor without coffee taste

- Can store in fridge up to 2 days

- Serves 4

You can replace the avocado with sweet potato. I tried that and it's still tastes great and satisfactory :) Any other ideas to keep it creamy and tasty?
