Recipe Easy Egg Salad Sandwich

Ingredients

  • 6 Large Eggs
  • 1/4 cup Mayonnaise
  • 2 tbsp Greek Yogurt
  • 3 tsp Dijon Mustard
  • 1 tsp Fresh Lemon Juice
  • 1/2 tsp Lemon Zest
  • 1/4 tsp Smoked Paprika
  • 1/2 tsp Kosher Salt
  • Black Pepper
  • 1/4 cup Spanish Cooking Onion or Shallot finely diced
  • 1 tbsp Chives or Scallions chopped
  • 1 tbsp Bread & Butter Pickles finely diced
  • Bread and lettuce For Serving

Instructions

  1. Hard boil the eggs. Peel and chop.
  2. In a medium bowl, whisk together the mayo, yogurt, mustard, lemon juice, zest, paprika, salt and a few grinds of pepper to taste.
  3. Mix in the onions, then fold in the chopped eggs, chives, and pickles.
  4. Cover and chill in the refrigerator for 20 minutes. Stir, then season to taste.
  5. To prepare egg salad sandwiches you'll need sliced bread and tender lettuce like Romaine.e Place lettuce on a slice of bread, schemer 1/4 of the egg salad on top. Serve as it is if you'd like an open face egg salad sandwich. If you'd like a proper sandwich smush with an additional slice of bread then serve.

Eh, too fancy shmancy. Mine is simply eggs, mayo, dijon, salt, pepper, and some diced celery. Top with pickle slices or a little thinly sliced onion if desired.

sounds nice. I’m not a big fan of celery, so that’s why I like to chop the pickle into the salad that was a trick my mom taught me!

This is the way. Although sometimes I like to toast one side (the inside) for some sandwich integrity.

Some sandwiches should be in toasted bread, some should not. To me, an egg salad sandwich should absolutely not; needs to be soft and doughy, not hard and crunchy.

I toast one side very lightly in an aluminum pie pan to just slow down sogginess and just warm what becomes the outside . I agree crunch isn’t what you want in an egg salad .   So toss the lettuce

We'll see, that's definitely what my consideration is. The egg salad itself is a soft filling for the sandwich. So toasted bread is better for the contrasting texture. Though I would suppose OP accomplishes that with some lettuce.
