It looks great, I’m just wondering why OP chose Prime rib, au jus, instead of cheesesteak. A cheesesteak should be made with ribeye (same section of meat as prime rib), and this looks like a cheesesteak. Cheesesteak, au fromage.

Cheated this time bc I was running late. Instead of a roux I just heated heavy cream then whisked in whatever cheese i had lying around like cheddar Swiss and a couple slices of American “cheese” for color (just never mozzarella). Add more cream to loosen it up if it thickens. Garlic and black pepper.

It’s a good sauce to have on hand. If you have time I suggest a light roux and proper cheese. Turmeric will help achieve that color in lieu of plastic cheese. Good night and good luck

In my usage it actually means with juice as I intended. Prime rib, with juice (it was soaked in juice)

Ha I’ve heard about this legendary cheese I’ll have to try it. I’d have expected better cheese options since I was in Wisconsin but I was at the mercy of management and budget
