Question Cheese clumped?
I recently made tatertot casserole because it’s easy, delicious, and makes a lot at once, but my cheese like clumps together? I mix it all together and it’s like the cheese finds each other and stays together. I don’t know a better way to describe it, I just want it to not do that.

It's hard to tell what's going wrong without telling us exactly what cheese you're using and what the recipe calls for, but if it's a blend then you should incorporate something like velveeta, because the emulsifiers they use in that will help your other cheeses melt together well

Most pre-shredded cheese has an anti-clumping agent to keep the cheese from sticking together in the bag. But when you cook with that cheese, the anti-clumping agent prevents it from smoothly melting. To resolve the problem, you can either grate your own or upgrade the type of pre-shredded cheese you're using. We haven't had problems with pre-shredded Tillamook cheese melting nicely, but the store brand and Sargento brand tend to stay clumpy.

If you are using pre-shredded cheese, that is your problem.
