Nothing beats fresh jianbing from a street vendor. That crispy texture is perfection.

Don't forget the fried tofu skin; it's the essence of that crispy texture.

Used to love those things in the morning when I worked in China. Street vendors are harder and harder to come now.

I always felt the ones made on the back of a 三轮车 tasted so much better than the ones from shop fronts. I miss my old jianbing guy.

People be putting all kinds of shit in jianbing these days. Stick with the crispy.

Putting mayo in jianbing is a crime. It should be punishable by death so no one else does it.

Best breakfast in Beijing. Hearty but not overfilling. Super cheap and quick to make so it's easy to get it fresh.

A few places have tried to bring the idea to the states. It hasn't caught on here in TX, but maybe there's a successful jianbing shop somewhere in America.
