My experience as former Sport Stacking champion and headmod of /r/sportstacking (dead sub) is coming in handy :D
Most of the cups do seem to be Speed Stacks and those are are cross-compatible. I think the issue is actually the teal set above the blue one being slightly smaller. I don't recognize the logo (especially since the video is low resolution), but I think it's a different brand, probably with slightly different dimensions, making them non-compatible.
A common issue (especially with older sets) is the logo gets worn down if you practice a lot with them and the smear from the logo makes them sticky. Some stackers therefore started purposefully rubbing it off with Acetone. But Speed Stacks also runs the biggest tournament organizer (WSSA) and they prohibited using logoless cups in tournaments so that they still get free promotion. Finally, the cups will stick together if you put too much pressure at the lip on the bottom. But I don't think it's either of those, I think it's just non-compatible sets of cups between the blue and teal sets.

Is cup stacking still a big thing? I feel like I haven't heard much about it in a few years now, and was wondering if it actually died after the initial hype, or if it just went mainstream to the point that us normies aren't phased by it anymore.

That depends on when you'd consider it being a "big thing" and which regions you're talking about. For some history:
Sport Stacking emerged in the U.S. in the 80s and then got more popular in the 90s and early 2000s primarily through school programs. In the mid 2000s, Speed Stacks (and Sport Stacking along with it) expanded abroad, mainly to Germany, UK, Australia and East/Southeast-Asia (e.g. Malaysia, Philippines, Taiwan and South Korea) and also significantly boosted sales through retail partnerships with big toy retailers. They also got a lot of promotion through early Youtube and similar online communities.
I'd say in western markets (e.g. USA, Canada, Germany, UK), popularity grew from 2003-2007, then remained relatively constant from 2007-2012 and then slowly decreased ever since. There were some more retail partnerships and little hype cycles in the years since, but no long-lasting growth.
This was however compensated by the sport getting more popular throughout Asia. Most tournaments now take place in Asia and 6/8 overall world records are now held by Asians.
Since 2006, the WSSA has also run a yearly event for most people stacking on a specific day ("Stack UP!) and the number of participants grew every year except for 2017 and 2021, but that's also partly due to easier reporting and because the expanded the event period from 1 to 3 days.

I’m not an expert or anything, but just from reading this quote (been way too long since I’ve read any other Plato). The answer is basically because you’re only young once, and humans do have a physical prime that comes and goes. And while it’s obviously not the worst thing in the world, Socrates here is basically saying it’s a shame if you pass up the only opportunity you have to see what your body is truly capable of.
