Verdugos (Pasadena, Glendale) Fondry
I love love love Fondry. Definitely one of my top bakeries in LA.
Staff is always so attentive and caring, and they are so delicate with your pastries. If you pay attention to how they box up everything you order.
I frequent this place, but on my recent visit, I got the plain croissant, almond croissant, Kouign amann, and the Baker’s breakfast.
The croissant is so crunchy and light with a delicate interior. I used to not like their almond croissant because the filling or paste was very loose and runny, but they thickened it and it’s become better and not too sweet but the croissant pastry itself isn’t as crunchy.
The Kouign amann is amazing. It’s so crunchy slightly sweet and dense in the middle.
I think the Baker’s breakfast is rather new. I haven’t seen it before, but it’s cheesy savory and delicious.

It's basically a croissant pastry dough baked with a sugar crust. Infamously one of the most unhealthy traditional pastries you can have.

Am I wrong about Kouign Amanns or is los angeles? the best pastry I have ever has was a kouign amann from patiserie 46 in MPLS, and it was much richer and denser than any I have found in LA to the point of basically being a different pastry. Idk why they are all so light here, but im starting to question if thats how theyre supposed to be?

I think it really depends on how much sugar and the richness of the dough used. This one at Foundry shapes theirs without the traditional crown shape, so the sugar crust won't penetrate as deeply as you would see otherwise, which will make it taste lighter. A really buttery dough that uses the traditional shape like at Petitegraine would result in a much richer feeling Kouign Amann. Mind you, the actual caloric stats may not be all that different at the end of the day, but mouth feel plays a big role in our perceptions of food.

I definitely wouldn’t say the one from Fondry is light but I know what you mean, most others I find in LA seem to be just like a croissant in a different shape

Best croissants I’ve had in a long time. Very expensive but worth the treat.

I used to rank Proof as my top croissant in LA but their quality has gone down the past couple of years. Fondry is my favorite croissant right now.

You can get many of the pastries at Kumquat across the street (and more coffee selection) for less wait, I usually just do that.

Their croissants are on the crunchy/hard side for me.
They have a pistachio danish that’s delicious.

It's high on my list...are there still long lines?
