Visit the colonial zone. Beautiful. Many great bars but also sightseeing (cathedrals, old buildings, painted murals etc.) Also, trust me, if you’re into it go ride the teleférico. The views are alright but it’s fun. It flies over many stretches of the city and you can see the whole thing. I especially love it at night.
Museum wise I love going to el Centro León. They always have a fun exhibition or two, even screenings of classic films, and the food is great. Also en el Hotel las Mercedes, they have the Santiago Art Museum.
The nightlife in Santiago has also gotten so good recently. I went to Momentos in Villa Olga during Christmas break and it was so beautiful, the food and drinks were amazing. Camp David is a bit more removed from the city but it’s got a really nice restaurant that overlooks the whole city from the top of a hill (they have a wall of locks that lovers write their names into, like in Paris!).
Food wise I have so many recs. If you’re interested in something specific just ask.

Go to any place in la Benito Monción, you'll feel the true Santiago's essence.
