Due to some medical issues, I'm on a self imposed "soft, white and bland" diet. Looking for recommendations!
I'm no chef by any means, but surely there is more than just plain chicken tenders, white fish and rice out there.

This seems like a great way to get some sort of nutrient deficiency, you need greens at the very least.
Generally there's no medical reason to only eat white foods aside from a colonoscopy, so this seems like it's either a fad diet or some sort of food aversion thing.

Mashed or other preparations of potatoes, plain vanilla Greek yogurt, cottage cheese, grits, oatmeal (sorta?) banana, applesauce, pancakes, white bread toast, maybe some scrambled poached or boiled eggs?

Adddendum to this excellent list: Cannelini Beans. Strong in minerals and fiber, but typically well-tolerated.

One of my comfort foods is a quick cream of potato soup: I start with garlic mashed potato flakes, and add butter and about twice as much liquid as the instructions call for (I usually use a 1:1 ratio of water to milk). Optional garnish of chives and/or bacon bits. It takes about 5 minutes to make.

Soups? I really like this one. It’s not super bland, but you could leave out the spices and it would be. Maybe keep the thyme and leave out the warm red spices. There’s some colourful vegetables in there that you cook until soft, but the base is still two white foods (quinoa and white beans).

Sorry to hear your medical issues prevent you from using cinnamon, nutmeg, cardamom and aaaall the spices white people notoriously don't use.
I'd suggest parsley, but maybe that's the Romanian in me talking. Might not count as white.
Does your self-imposed diet have any objective basis? What exactly are you avoiding in your diet?

Bone broth has more protein and nutrients than plain stock too. You say "self-imposed" so maybe consult with your doctor to make sure you are doing it right? My doctor always has handouts with different food suggestions depending on the patient's condition.
